- 2 Chicken Breasts
- 1 cup BBQ Sauce
- 2 Sweet Potatoes, chopped
- 2 tbsp Olive Oil
- Salt & Pepper to taste
- 1 cup Bell Peppers, sliced
- 1 cup Broccoli, chopped
- 1 tsp Garlic Powder
Instructions
- Preheat your oven to 400°F (200°C).
- Chop the sweet potatoes into 1-inch cubes and arrange them on a baking sheet. Drizzle with olive oil, season with salt, pepper, and garlic powder.
- Roast the sweet potatoes for 20-25 minutes, flipping halfway through.
- Heat a grill pan or skillet over medium-high heat and season the chicken breasts with salt and pepper. Cook for 6-7 minutes on each side, brushing with BBQ sauce during the last minute.
- Sauté sliced bell peppers and broccoli in the same pan for 3-4 minutes until tender.
- Assemble your bowls with sweet potatoes, BBQ chicken, and sautéed veggies, drizzling with additional BBQ sauce if desired.
