Description

Delightfully soft cookies filled with blueberry preserves and flavored with almond, dusted in powdered sugar for a snowy finish.


Ingredients

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 cup finely chopped almonds
  • 1/2 teaspoon salt
  • 1/2 cup blueberry preserves
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream together butter and powdered sugar using an electric mixer until light and fluffy, about 3 to 5 minutes.
  3. Add vanilla and almond extracts, blending well.
  4. Incorporate flour, chopped almonds, and salt, mixing until just combined.
  5. Take about a tablespoon of dough, flatten it, and place a spoonful of blueberry preserves in the center.
  6. Fold the dough around the preserve to form a ball.
  7. Arrange cookie balls on the baking sheet, spaced evenly.
  8. Bake for 12-15 minutes, allowing edges to turn golden while centers remain soft.
  9. Roll cooled cookies in powdered sugar before transferring to a wire rack.
