Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
- Cream together butter and powdered sugar using an electric mixer until light and fluffy, about 3 to 5 minutes.
- Add vanilla and almond extracts, blending well.
- Incorporate flour, chopped almonds, and salt, mixing until just combined.
- Take about a tablespoon of dough, flatten it, and place a spoonful of blueberry preserves in the center.
- Fold the dough around the preserve to form a ball.
- Arrange cookie balls on the baking sheet, spaced evenly.
- Bake for 12-15 minutes, allowing edges to turn golden while centers remain soft.
- Roll cooled cookies in powdered sugar before transferring to a wire rack.
Notes
