Description

A vibrant bowl of Caprese Tortellini Pasta Salad combining cheese tortellini, fresh mozzarella, juicy cherry tomatoes, and aromatic basil, all dressed in a zesty balsamic vinaigrette.

  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls (bocconcini)
  • 1/2 cup fresh basil, torn
  • 1/4 cup balsamic vinaigrette
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini: Fill a large pot with generously salted water. Once boiling, add cheese tortellini and cook according to package instructions, about 3-5 minutes. Drain and rinse under cold water to stop the cooking.
  2. Combine ingredients: In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, and mozzarella balls.
  3. Add basil: Tear fresh basil leaves with your hands and add them to the bowl, letting the oils release and enhance the dish.
  4. Drizzle with dressing: Pour balsamic vinaigrette and olive oil over the ingredients. Season with salt and pepper to taste.
  5. Toss to combine: Gently toss the salad until all ingredients are well-coated in the dressing.
