- 3 medium zucchinis, thinly sliced
- 2 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for topping
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the ricotta: In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth.
- Layer the lasagna: Spread a thin layer of marinara sauce at the base of your baking dish. Then, place a layer of zucchini slices, followed by half of the ricotta mixture and a generous layer of mozzarella.
- Repeat the layers: Continue adding layers of marinara, zucchini, ricotta mixture, and mozzarella until your ingredients are used, finishing with a layer of marinara sauce and a final sprinkling of mozzarella on top.
- Cover and bake: Tightly cover the dish with aluminum foil and bake for 25 minutes.
- Uncover and finish baking: After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Garnish and serve: Allow the lasagna to cool for a few minutes, then garnish with fresh basil before serving.
Notes
Make-ahead: Prepare the lasagna a day in advance and refrigerate. Bake fresh when ready to serve. Customize with additional vegetables as desired.
