Description

A delicious, guilt-free lasagna made with layers of zucchini, ricotta, and mozzarella, creating a comforting dish perfect for any occasion.


Ingredients

  • 3 medium zucchinis, thinly sliced
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for topping

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the ricotta: In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, salt, and pepper. Mix until smooth.
  3. Layer the lasagna: Spread a thin layer of marinara sauce at the base of your baking dish. Then, place a layer of zucchini slices, followed by half of the ricotta mixture and a generous layer of mozzarella.
  4. Repeat the layers: Continue adding layers of marinara, zucchini, ricotta mixture, and mozzarella until your ingredients are used, finishing with a layer of marinara sauce and a final sprinkling of mozzarella on top.
  5. Cover and bake: Tightly cover the dish with aluminum foil and bake for 25 minutes.
  6. Uncover and finish baking: After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  7. Garnish and serve: Allow the lasagna to cool for a few minutes, then garnish with fresh basil before serving.

Notes

Make-ahead: Prepare the lasagna a day in advance and refrigerate. Bake fresh when ready to serve. Customize with additional vegetables as desired.
