- 1 can Rotel tomatoes (diced)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 soft tortillas (flour or corn)
- 1/2 onion (chopped)
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Optional toppings: sour cream, fresh lettuce, chopped tomatoes, or creamy avocado
Instructions
- In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
- Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
- Stir in the diced Rotel tomatoes and taco seasoning, allowing the mixture to simmer for 5 minutes.
- While the beef mixture simmers, warm your tortillas in a separate pan or microwave for about 30 seconds.
- Generously fill each tortilla with the beef mixture, followed by a handful of shredded cheese.
- Customize with any optional toppings you desire.
- Serve warm and enjoy.
