Description

Delight in the rich flavors of ground beef seasoned with Rotel tomatoes, all wrapped in a warm tortilla and topped with gooey cheese.

  • 1 can Rotel tomatoes (diced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 soft tortillas (flour or corn)
  • 1/2 onion (chopped)
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Optional toppings: sour cream, fresh lettuce, chopped tomatoes, or creamy avocado

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks. Drain any excess fat.
  2. Add the chopped onion to the skillet and sauté until softened, about 3-4 minutes.
  3. Stir in the diced Rotel tomatoes and taco seasoning, allowing the mixture to simmer for 5 minutes.
  4. While the beef mixture simmers, warm your tortillas in a separate pan or microwave for about 30 seconds.
  5. Generously fill each tortilla with the beef mixture, followed by a handful of shredded cheese.
