Description

A vibrant and flavorful chicken stir fry packed with fresh vegetables and savory sauce, perfect for a wholesome meal.


Ingredients

Scale
  • 2 chicken breasts, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat sesame oil in a large pan over medium-high heat.
  2. Add the sliced chicken to the pan. Cook until browned and cooked through, about 5-7 minutes.
  3. Toss in the minced garlic and ginger. Sauté for another minute.
  4. Introduce the mixed vegetables to the pan. Stir-fry until they become tender but still crisp, about 3-4 minutes.
  5. Pour the soy sauce over the mixture, stirring everything together to ensure each ingredient gets coated.
  6. Season with salt and pepper to taste.
  7. Serve hot over a bed of cooked rice or noodles.

Notes

For a quicker prep, chop chicken and vegetables a day in advance.
