Description

A vibrant and flavorful Chicken Tzatziki Bowl that brings together seasoned chicken, fresh vegetables, and creamy tzatziki on a bed of rice.


Ingredients

  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup tzatziki sauce

Instructions

  1. Marinate the chicken: In a mixing bowl, combine diced chicken, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Ensure every piece is thoroughly coated and let it marinate for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium heat and add the marinated chicken. Cook for about 6-8 minutes until golden brown and fully cooked, stirring occasionally.
  3. Prepare the base: While the chicken cooks, set a scoop of cooked rice as the base in your serving bowl.
  4. Top your creation: Arrange the freshly cooked chicken on top of the rice, followed by the fresh cucumbers, cherry tomatoes, and red onion.
  5. Drizzle and serve: Generously drizzle tzatziki sauce over everything and serve immediately.

Notes
