Description

A vibrant dish featuring tender chicken and fluffy rice infused with cilantro and lime, complemented by black beans, sweet corn, and red bell pepper.


Ingredients

  • 1 cup rice (long grain or jasmine)
  • 2 cups chicken broth (low sodium)
  • 1 lb chicken breast, diced
  • 1 cup black beans, drained and rinsed
  • 1 cup sweet corn, frozen or canned
  • 1 red bell pepper, diced
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: pinch of cumin

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast to the skillet, seasoning generously with salt and pepper.
  3. Cook for 5-7 minutes, stirring frequently, until golden brown on all sides.
  4. Stir in the rice, black beans, corn, and diced red bell pepper.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce the heat to low, cover the skillet tightly, and simmer for about 15 minutes, or until the rice is fluffy.
  7. Remove from heat, squeeze in the lime juice, and fold in the chopped cilantro gently.
  8. Serve immediately and enjoy!

Notes

For extra flavor, marinate chicken in lime juice and cilantro overnight. Customize with jalapeños or avocado.
