- 1 cup rice (long grain or jasmine)
- 2 cups chicken broth (low sodium)
- 1 lb chicken breast, diced
- 1 cup black beans, drained and rinsed
- 1 cup sweet corn, frozen or canned
- 1 red bell pepper, diced
- 1/2 cup cilantro, chopped
- Juice of 2 limes
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: pinch of cumin
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken breast to the skillet, seasoning generously with salt and pepper.
- Cook for 5-7 minutes, stirring frequently, until golden brown on all sides.
- Stir in the rice, black beans, corn, and diced red bell pepper.
- Pour in the chicken broth and bring to a boil.
- Reduce the heat to low, cover the skillet tightly, and simmer for about 15 minutes, or until the rice is fluffy.
- Remove from heat, squeeze in the lime juice, and fold in the chopped cilantro gently.
- Serve immediately and enjoy!
Notes
For extra flavor, marinate chicken in lime juice and cilantro overnight. Customize with jalapeños or avocado.
