Description

Deliciously marinated grilled chicken tucked into warm tortillas, complemented by fresh toppings and zesty flavors.


Ingredients

  • 2 Boneless, Skinless Chicken Breasts
  • 1/2 cup Fresh Cilantro, chopped
  • 1/4 cup Lime Juice
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil
  • 2 tbsp Taco Seasoning
  • 4 Corn or Flour Tortillas
  • 1 Avocado, sliced
  • 1/2 cup Salsa
  • 1 cup Shredded Lettuce
  • 1/2 cup Cheese, crumbled (cotija or cheddar)
  • 1/4 cup Crema

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together lime juice, olive oil, finely chopped cilantro, minced garlic, and taco seasoning until well combined.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag or large bowl, pouring the marinade over them. Seal or cover, letting the chicken luxuriate in those bold flavors in the refrigerator for at least 30 minutes.
  3. Preheat the Grill: Set your grill to medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade and grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F.
  5. Rest and Slice: Remove the chicken from the grill and let it rest for about 5 minutes. Slice against the grain for tender strips.
  6. Assemble Your Tacos: Warm your tortillas and place the grilled chicken strips inside. Top with avocado, salsa, lettuce, cheese, and drizzle with crema.

Notes

Marinate chicken for up to 2 hours for optimal flavor. Consider using black beans or pickled jalapeños for extra flavor.
