Ingredients

- 1 cup coconut milk
- 1 cup water
- 1 cup pineapple chunks
- 1/4 cup toasted coconut flakes
- Salt to taste

Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- Combine the rinsed rice, coconut milk, water, and a pinch of salt in a medium saucepan.
- Bring to a boil over medium heat, then reduce the heat to low and cover.
- Simmer for 15-20 minutes.
- Fluff the rice with a fork and gently fold in the pineapple chunks.
- Serve warm, topped with toasted coconut flakes and chopped herbs.
