Ingredients

- 4 cups corn (fresh, frozen, or canned)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup cotija cheese (crumbled)
- 1/4 cup cilantro (chopped)
- 1/2 teaspoon chili powder
- 1 lime (juiced)
- Salt and pepper to taste
Instructions
- Grill the corn over medium heat until lightly charred, about 10-15 minutes. Allow to cool, then cut kernels off the cob.
- Prepare the dressing by whisking together mayonnaise, sour cream, cotija cheese, cilantro, chili powder, lime juice, salt, and pepper in a large bowl.
- Combine the corn with the dressing, making sure each kernel is well-coated.
- Chill the salad in the refrigerator for at least 30 minutes to let flavors meld.
- Serve the salad cold as a side dish or in lettuce wraps.
Notes
For a spicier kick, consider adding diced jalapeños. This salad can be made ahead and stored for up to 3-4 days.
