Description

A colorful and creamy salad featuring sweet corn, cotija cheese, and zesty lime, perfect for summer gatherings.


Ingredients

  • 4 cups corn (fresh, frozen, or canned)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese (crumbled)
  • 1/4 cup cilantro (chopped)
  • 1/2 teaspoon chili powder
  • 1 lime (juiced)
  • Salt and pepper to taste

Instructions

  1. Grill the corn over medium heat until lightly charred, about 10-15 minutes. Allow to cool, then cut kernels off the cob.
  2. Prepare the dressing by whisking together mayonnaise, sour cream, cotija cheese, cilantro, chili powder, lime juice, salt, and pepper in a large bowl.
  3. Combine the corn with the dressing, making sure each kernel is well-coated.
  4. Chill the salad in the refrigerator for at least 30 minutes to let flavors meld.
  5. Serve the salad cold as a side dish or in lettuce wraps.

Notes
