Description

A vibrant dish featuring grilled chicken marinated in honey and lime, served on a creamy bed of avocado rice.


Ingredients

  • 1/4 cup honey
  • 2 limes (juiced)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper (to taste)
  • 1 cup rice (uncooked)
  • 1 avocado (diced)
  • 1/2 cup cilantro (chopped)
  • 1/4 cup sour cream

Instructions

  1. Marinate the Chicken: In a mixing bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken and let it marinate for at least 30 minutes.
  2. Prepare the Rice: Cook rice according to package directions. Rinse first under cold water for fluffiness. Set aside to cool.
  3. Grill the Chicken: Heat the grill or skillet over medium heat, add oil, then place marinated chicken. Cook for 6-7 minutes on each side until golden brown and juicy. Let it rest before slicing.
  4. Create the Avocado Rice: In a bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream. Gently fold together.
  5. Assemble Your Dish: Spoon avocado rice onto plates, lay sliced chicken on top, and drizzle with lime juice.

Notes

For best flavor, marinate chicken overnight. You can substitute maple syrup for honey or add cayenne pepper for a kick.
