- 4 large eggs, hard-boiled and chopped
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar

- Chopped green onions (optional)
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook according to package instructions until al dente, typically about 7–9 minutes.
- Drain and Cool: Once cooked, drain the macaroni in a colander and let it cool completely.
- Craft the Dressing: In a large mixing bowl, combine the mayonnaise, Dijon mustard, white vinegar, sugar, salt, and pepper. Whisk vigorously until smooth.
- Incorporate the Ingredients: Gently fold in the chopped hard-boiled eggs and the cooled macaroni using a spatula.
- Combine and Chill: Stir carefully until everything is well incorporated, then transfer to a serving dish and sprinkle paprika over the top.
- Refrigerate: Cover and let chill in the refrigerator for at least 30 minutes.
Notes
For a fresher taste, add green onions just before serving. This pasta salad can be made a day in advance to enhance flavors.
