Description

A refreshing pasta salad that captures the essence of a dirty martini with olives, cherry tomatoes, and a creamy dressing.


Ingredients

Scale
  • 8 ounces pasta (such as rotini or fusilli)
  • 1/2 cup green olives, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons olive brine
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta by boiling water in a large pot and cooking according to package instructions until al dente. Drain and rinse under cold water.
  2. Combine ingredients in a large mixing bowl: add cooled pasta, sliced green and black olives, cherry tomatoes, and finely chopped red onion. Toss gently.
  3. Mix the dressing in a separate bowl by whisking together mayonnaise, olive brine, lemon juice, and chopped parsley.
  4. Dress the pasta salad by pouring the dressing over the salad and gently tossing.
  5. Season with salt and pepper to taste and give another gentle toss.
  6. Chill the salad by covering with plastic wrap and refrigerating for at least 30 minutes before serving.

Notes

Make-ahead for best flavor; use gluten-free pasta if desired; add grilled chicken or shrimp for protein.
