A refreshing pasta salad that captures the essence of a dirty martini with olives, cherry tomatoes, and a creamy dressing.
Ingredients

- 8 ounces pasta (such as rotini or fusilli)
- 1/2 cup green olives, sliced
- 1/2 cup black olives, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 2 tablespoons olive brine
- 1 tablespoon lemon juice
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the pasta by boiling water in a large pot and cooking according to package instructions until al dente. Drain and rinse under cold water.
- Combine ingredients in a large mixing bowl: add cooled pasta, sliced green and black olives, cherry tomatoes, and finely chopped red onion. Toss gently.
- Mix the dressing in a separate bowl by whisking together mayonnaise, olive brine, lemon juice, and chopped parsley.
- Dress the pasta salad by pouring the dressing over the salad and gently tossing.
- Season with salt and pepper to taste and give another gentle toss.
- Chill the salad by covering with plastic wrap and refrigerating for at least 30 minutes before serving.
Notes
Make-ahead for best flavor; use gluten-free pasta if desired; add grilled chicken or shrimp for protein.
