- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning
- 1 bell pepper, sliced
- 1 onion, sliced
- Tortillas for serving
- Optional toppings: sour cream, salsa, cheese, guacamole
Instructions
- Begin by marinating the chicken breasts in a bowl with olive oil and fajita seasoning. Let it sit for at least 30 minutes.
- Heat a skillet over medium-high heat, then add the marinated chicken, cooking for about 6-7 minutes on each side until no longer pink inside.
- Remove the chicken from the skillet and let it rest on a cutting board.
- Toss in your sliced bell peppers and onions into the same skillet. Sauté for about 5 minutes until tender.
- Slice the rested chicken into strips and combine with the sautéed vegetables.
- Serve the mixture in warmed tortillas with optional toppings.
Notes
Marinate chicken for a few hours or overnight for best flavor. Feel free to use chicken thighs or add other vegetables as desired.
