Description

A simple and flavorful dish with marinated chicken, sautéed peppers, and onions wrapped in warm tortillas.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Tortillas for serving
  • Optional toppings: sour cream, salsa, cheese, guacamole

Instructions

  1. Begin by marinating the chicken breasts in a bowl with olive oil and fajita seasoning. Let it sit for at least 30 minutes.
  2. Heat a skillet over medium-high heat, then add the marinated chicken, cooking for about 6-7 minutes on each side until no longer pink inside.
  3. Remove the chicken from the skillet and let it rest on a cutting board.
  4. Toss in your sliced bell peppers and onions into the same skillet. Sauté for about 5 minutes until tender.
  5. Slice the rested chicken into strips and combine with the sautéed vegetables.
  6. Serve the mixture in warmed tortillas with optional toppings.

Notes

Marinate chicken for a few hours or overnight for best flavor. Feel free to use chicken thighs or add other vegetables as desired.
