A comforting bowl of French onion beef short rib soup with caramelized onions, tender short ribs, and melted cheese.
Ingredients

- 2 lbs short ribs
- 4 onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup red wine
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper, to taste
- Baguette or crusty bread, sliced
- 1 cup grated cheese (Gruyère or mozzarella)
Instructions
- Sear the short ribs in olive oil over medium heat, seasoning with salt and pepper, for 8–10 minutes until browned.
- Caramelize the onions and garlic in the same pot for 15–20 minutes until golden brown.
- Deglaze with red wine, scraping up browned bits for about 5 minutes.
- Add beef broth and thyme, return short ribs, and season with salt and pepper.
- Simmer for 2–3 hours until ribs are tender.
- Broil topped soup with sliced baguette and cheese for 3–5 minutes until bubbly.
- Serve immediately, garnished with thyme if desired.
Notes
Perfect for make-ahead meals; tastes better the next day. Can be made in a slow cooker.
