Description

A comforting bowl of French onion beef short rib soup with caramelized onions, tender short ribs, and melted cheese.


Ingredients

Scale
  • 2 lbs short ribs
  • 4 onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup red wine
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • Salt and pepper, to taste
  • Baguette or crusty bread, sliced
  • 1 cup grated cheese (Gruyère or mozzarella)

Instructions

  1. Sear the short ribs in olive oil over medium heat, seasoning with salt and pepper, for 8–10 minutes until browned.
  2. Caramelize the onions and garlic in the same pot for 15–20 minutes until golden brown.
  3. Deglaze with red wine, scraping up browned bits for about 5 minutes.
  4. Add beef broth and thyme, return short ribs, and season with salt and pepper.
  5. Simmer for 2–3 hours until ribs are tender.
  6. Broil topped soup with sliced baguette and cheese for 3–5 minutes until bubbly.
  7. Serve immediately, garnished with thyme if desired.

Notes

Perfect for make-ahead meals; tastes better the next day. Can be made in a slow cooker.
