Description

A refreshing and flavorful dish featuring grilled chicken, creamy feta, and crunchy vegetables inspired by Greek cuisine.


Ingredients

  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup black olives
  • 1/2 cup feta cheese, crumbled
  • 1 cucumber, chopped
  • 1 tomato, diced
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon dried oregano

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine chicken breast pieces with olive oil, lemon juice, minced garlic, salt, pepper, and oregano. Let it marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until cooked through.
  3. Prepare the Base: In a large serving bowl, layer cooked chickpeas, cucumber, tomato, black olives, and crumbled feta cheese.
  4. Add the Chicken: Place the grilled chicken strips on top of the vegetable mix.
  5. Dress It Up: Drizzle with a dressing made from olive oil, lemon juice, salt, and pepper.
  6. Serve Fresh: Present the bowls immediately or store in the fridge for meal prep, keeping the dressing separate until serving.

Notes
