- 4 cups granulated sugar
- 1/4 cup fresh lemon juice
- 1 pouch (3 oz liquid fruit pectin)
Instructions
- Prepare the Fresh Figs: Rinse the figs under cold water and pat them dry. Remove the stems and chop them into small pieces.
- Zest and Juice the Orange: Zest the orange and squeeze out the juice, ensuring to catch any seeds.
- Grate Ginger Finely: Peel and grate the fresh ginger.
- Mash the Fruit Gently: In a heavy-bottomed pot, combine the figs and raspberries, and gently mash them.
- Add Citrus and Ginger: Stir in the zest and juice of the orange, along with the grated ginger.
- Dissolve Sugar Completely: Add the sugar and lemon juice, stirring until the sugar dissolves.
- Bring to a Rapid Boil: Increase the heat and allow the mixture to boil vigorously.
- Activate Pectin Power: Stir in the liquid pectin and boil for an additional minute.
- Test for Perfect Set: Use a spoon test to check if the jam has set properly.
- Skim Beautiful Foam: Skim off any foam generated during cooking.
- Sterilize Jars Hot: Fill jars with boiling water for sterilization.
- Fill Jars Properly: Use a canning funnel to fill each jar with the hot jam.
- Water Bath Process: Process the filled jars in a boiling water bath for about 10 minutes.
- Cool and Check Seals: Let jars cool and check the seals.

Use fresh, peak-season fruits for the best flavor. Store in a cool, dark place for up to a year, and once opened, keep in the fridge for about four weeks.
