Description

A delightful jam made with fresh figs, raspberries, and a hint of orange and ginger, perfect for spreading on toast or as a dessert topping.


Ingredients

  • 2 cups fresh ripe figs, stemmed and chopped
  • 2 cups fresh raspberries (or frozen)
  • 1 large navel orange (zested and juiced)
  • 3 Tbsp fresh ginger, finely grated
  • 4 cups granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 pouch (3 oz liquid fruit pectin)

Instructions

  1. Prepare the Fresh Figs: Rinse the figs under cold water and pat them dry. Remove the stems and chop them into small pieces.
  2. Zest and Juice the Orange: Zest the orange and squeeze out the juice, ensuring to catch any seeds.
  3. Grate Ginger Finely: Peel and grate the fresh ginger.
  4. Mash the Fruit Gently: In a heavy-bottomed pot, combine the figs and raspberries, and gently mash them.
  5. Add Citrus and Ginger: Stir in the zest and juice of the orange, along with the grated ginger.
  6. Dissolve Sugar Completely: Add the sugar and lemon juice, stirring until the sugar dissolves.
  7. Bring to a Rapid Boil: Increase the heat and allow the mixture to boil vigorously.
  8. Activate Pectin Power: Stir in the liquid pectin and boil for an additional minute.
  9. Test for Perfect Set: Use a spoon test to check if the jam has set properly.
  10. Skim Beautiful Foam: Skim off any foam generated during cooking.
  11. Sterilize Jars Hot: Fill jars with boiling water for sterilization.
  12. Fill Jars Properly: Use a canning funnel to fill each jar with the hot jam.
  13. Water Bath Process: Process the filled jars in a boiling water bath for about 10 minutes.
  14. Cool and Check Seals: Let jars cool and check the seals.

Notes

Use fresh, peak-season fruits for the best flavor. Store in a cool, dark place for up to a year, and once opened, keep in the fridge for about four weeks.
