Ingredients

Scale
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces dark chocolate
  • 1/4 cup edible gold leaf

Instructions

  2. Create the dough by combining water and butter in a saucepan, heating until boiling.
  3. Add flour and salt, stirring until a cohesive ball forms.
  4. Cool for about 5 minutes to prevent cooking the eggs.

  6. Pipe small mounds onto a parchment-lined baking sheet.
  7. Bake for 20-25 minutes until puffed and golden brown.
  8. Cool on a wire rack.
  9. Whip cream with powdered sugar and vanilla until stiff peaks form.
  10. Fill the cooled pastries with whipped cream.
  11. Melt dark chocolate over simmering water.
  12. Drizzle melted chocolate and add edible gold leaf on top.

Notes

Make the choux pastry in advance and fill just before serving for the best texture.
