Description

Soft, sweet muffins with a luscious cream cheese center and a hint of cinnamon, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon cinnamon sugar (topping)
  • Optional: 1/4 cup white chocolate, melted (drizzle)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 12-cup muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  3. Combine the melted butter, milk, eggs, and vanilla extract in another bowl and whisk until smooth.
  4. Fold the wet mixture into the dry ingredients until just combined.
  5. Beat the softened cream cheese with powdered sugar until smooth.
  6. Fill each muffin liner halfway with batter, add cream cheese mixture, then top with more batter.
  7. Sprinkle cinnamon sugar on top of each muffin.
  8. Bake for 18-20 minutes or until golden brown.
  9. Cool briefly in the pan before transferring to a wire rack.
  10. Drizzle with melted white chocolate if desired.

Notes

Avoid overmixing the batter and keep an eye on the baking time for best results.
