- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup Greek yogurt
- 1/2 cup honey
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup chopped pistachios
- A pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs and melted butter in a mixing bowl until it resembles wet sand. Press firmly into the bottom of a greased 9×9-inch baking pan.
- Beat the softened cream cheese in a large bowl using an electric mixer until smooth.
- Add Greek yogurt, honey, eggs, vanilla extract, and a pinch of salt to the cream cheese mixture. Mix until fully combined.
- Fold in the chopped pistachios gently.
- Pour the mixture over the prepared crust, spreading it evenly.
- Bake for 30-35 minutes until the center is set with a slight jiggle.
- Allow cooling completely in the pan before cutting into squares.

Store in the fridge for up to four days or freeze for up to three months.
