Description

Decadent cheesecake bars featuring creamy Greek yogurt, honey, and crunchy pistachios, set on a buttery graham cracker crust.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl until it resembles wet sand. Press firmly into the bottom of a greased 9×9-inch baking pan.
  3. Beat the softened cream cheese in a large bowl using an electric mixer until smooth.
  4. Add Greek yogurt, honey, eggs, vanilla extract, and a pinch of salt to the cream cheese mixture. Mix until fully combined.
  5. Fold in the chopped pistachios gently.
  6. Pour the mixture over the prepared crust, spreading it evenly.
  7. Bake for 30-35 minutes until the center is set with a slight jiggle.
  8. Allow cooling completely in the pan before cutting into squares.

Store in the fridge for up to four days or freeze for up to three months.
