- 2 lbs golden potatoes
- 4 cloves fresh garlic, minced
- 2 cups shredded cheese (Cheddar, Mozzarella, Pepper Jack, or Gouda)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the grill to medium heat.
- Wash the golden potatoes and cut them into bite-sized pieces.
- Toss the potatoes with olive oil, minced garlic, salt, and pepper.
- Place the seasoned potatoes in a grill basket or wrap them in aluminum foil.
- Grill the potatoes for 25-30 minutes, turning occasionally until fork-tender.
- Remove from the grill and sprinkle cheese over them.
- Cover the grill or foil tightly to melt the cheese for about 5 minutes.
- Garnish with fresh parsley if desired.
