Description

A vibrant and fresh corn salad bursting with summer flavors, featuring crunchy vegetables and creamy mozzarella.


Ingredients

  • 2 cups fresh corn (or canned/frozen corn)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup mozzarella pearls
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Toss together the fresh corn, cherry tomatoes, diced cucumber, bell pepper, finely chopped red onion, and mozzarella pearls in a large mixing bowl.
  2. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl until combined.
  3. Drizzle the dressing over your salad ingredients and gently fold to ensure even coverage.
  4. Fold in the fresh basil, allowing its fragrant aroma to infuse the entire dish.

Notes
