Description

A hearty and healthy soup made with ground beef, fresh vegetables, and aromatic herbs, perfect for chilly nights or busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cabbage, chopped
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 can diced tomatoes (14 oz)
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked, about 5-7 minutes. Drain excess fat.
  2. Transfer the browned beef to your crockpot.
  3. Add the chopped onion and minced garlic.
  4. Toss in the chopped cabbage, sliced carrots, and chopped celery.
  5. Pour in the diced tomatoes with juice.
  6. Add the beef broth.
  7. Sprinkle in the Italian seasoning and adjust with salt and pepper.
  8. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  9. Stir the soup before serving, adjusting taste as needed.

Notes

Chop vegetables the night before to save time. Consider cooking it in an Instant Pot for a quicker version.
