- 1 lb chicken breast
- 4 cups chicken broth
- 2 cups carrots, chopped
- 2 cups celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 cups spinach or kale
Instructions
- Heat a generous splash of olive oil in a large pot or Dutch oven over medium heat.
- Add the diced onion and minced garlic, and sauté until golden, about 3-4 minutes.
- Introduce the chicken breast into the pot and sear for about 5 minutes.
- Pour in the chicken broth and bring to a gentle boil.
- Stir in the chopped carrots, celery, thyme, and rosemary, then lower the heat and simmer for 20-30 minutes.
- Remove the chicken from the pot and shred it into bite-sized pieces.
- Return the shredded chicken to the pot, then toss in the spinach or kale.
- Season with salt and pepper to taste and serve hot.
