Description

A comforting chicken soup filled with rich flavors and nourishing ingredients, perfect for any occasion.


Ingredients

Scale
  • 1 lb chicken breast
  • 4 cups chicken broth
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 cups spinach or kale

Instructions

  1. Heat a generous splash of olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and minced garlic, and sauté until golden, about 3-4 minutes.
  3. Introduce the chicken breast into the pot and sear for about 5 minutes.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Stir in the chopped carrots, celery, thyme, and rosemary, then lower the heat and simmer for 20-30 minutes.
  6. Remove the chicken from the pot and shred it into bite-sized pieces.
  7. Return the shredded chicken to the pot, then toss in the spinach or kale.
  8. Season with salt and pepper to taste and serve hot.

Notes
