Delicious homemade sourdough Runzas filled with savory beef, sautéed onions, and cabbage, wrapped in a crusty dough.

- 2 cups sourdough starter
- 4 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 cup butter, melted
- 1/2 cup milk
- 1 pound ground beef
- 1 small head cabbage, finely chopped
- 1 onion, diced
- 2 cups shredded cheese (cheddar or your choice)
- 1 egg (for egg wash)
Instructions
- Combine the sourdough starter, flour, sugar, salt, melted butter, and milk in a large bowl until a dough forms. Knead for about 10 minutes until smooth.
- Let it rise in a warm place until doubled in size, approximately 1–2 hours.
- Brown the ground beef in a skillet over medium heat, then add cabbage and onions, cooking until softened.
- Preheat your oven to 375°F (190°C).
- Roll out the risen dough on a floured surface, cutting into squares (about 4×4 inches).
- Place a spoonful of the beef mixture and cheese in the center of each square and fold over, pinching edges to seal.
- Arrange filled Runzas on a baking sheet lined with parchment paper and brush the tops with beaten egg.
- Bake for 25–30 minutes, or until golden brown.
Notes
Make-ahead tip: Prepare filling a day before and store it in the fridge. Dough can rise overnight in the fridge for more flavor.
