Description

Delicious homemade sourdough Runzas filled with savory beef, sautéed onions, and cabbage, wrapped in a crusty dough.


Ingredients

  • 2 cups sourdough starter
  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 pound ground beef
  • 1 small head cabbage, finely chopped
  • 1 onion, diced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 egg (for egg wash)

Instructions

  1. Combine the sourdough starter, flour, sugar, salt, melted butter, and milk in a large bowl until a dough forms. Knead for about 10 minutes until smooth.
  2. Let it rise in a warm place until doubled in size, approximately 1–2 hours.
  3. Brown the ground beef in a skillet over medium heat, then add cabbage and onions, cooking until softened.
  4. Preheat your oven to 375°F (190°C).
  5. Roll out the risen dough on a floured surface, cutting into squares (about 4×4 inches).
  6. Place a spoonful of the beef mixture and cheese in the center of each square and fold over, pinching edges to seal.
  7. Arrange filled Runzas on a baking sheet lined with parchment paper and brush the tops with beaten egg.
  8. Bake for 25–30 minutes, or until golden brown.

Notes

Make-ahead tip: Prepare filling a day before and store it in the fridge. Dough can rise overnight in the fridge for more flavor.
