Description

Ingredients

  • 1 cup long-grain rice
  • 2 medium tomatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Olive oil

Instructions

  1. Warm the olive oil in a large skillet over medium heat.
  2. Sauté the onion and garlic until softened, about 3-5 minutes.
  3. Add the diced tomatoes, paprika, cumin, and salt; cook until tomatoes soften, around 5 minutes.
  4. Coat the rice in the mixture and cook for 2-3 minutes.
  5. Pour in the broth and bring to a gentle boil.
  6. Reduce heat, cover, and let it simmer for 20 minutes, or until rice is tender.
  7. Fluff the rice with a fork before serving.
