Instructions
- Warm the olive oil in a large skillet over medium heat.
- Sauté the onion and garlic until softened, about 3-5 minutes.
- Add the diced tomatoes, paprika, cumin, and salt; cook until tomatoes soften, around 5 minutes.
- Coat the rice in the mixture and cook for 2-3 minutes.
- Pour in the broth and bring to a gentle boil.
- Reduce heat, cover, and let it simmer for 20 minutes, or until rice is tender.
- Fluff the rice with a fork before serving.
