Description

Ingredients

  • 2 pounds fresh carrots
  • 4 tablespoons unsalted butter
  • 3 tablespoons honey
  • 4 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Whisk together melted butter, honey, minced garlic, salt, and black pepper in a large mixing bowl.
  4. Add the carrot chunks to the bowl and toss to coat.
  5. Spread the carrots on the prepared baking sheet in a single layer.
  6. Roast in the oven for 25-30 minutes, flipping halfway.
