Description

A vibrant, flavor-packed bowl featuring grilled jerk chicken paired with sweet pineapple salsa and served over a bed of brown rice.


Ingredients

  • 1 lb chicken breast
  • 2 tablespoons jerk seasoning
  • 1 cup cooked brown rice
  • 1 cup diced pineapple
  • 1/2 cup diced red onion
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a mixing bowl, coat the chicken breast thoroughly with jerk seasoning. Cover the bowl and refrigerate for at least 30 minutes or overnight.
  2. Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side, until the internal temperature reaches 165°F.
  3. Prepare the salsa: In another bowl, combine diced pineapple, red onion, cilantro, lime juice, salt, and pepper. Mix gently and let sit.
  4. Serve: Once the chicken is done, let it rest before slicing. Serve the chicken over warm brown rice and top with pineapple salsa.

Notes
