- 1 and ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup sugar
- 2 cans (14 ounces each) sweetened condensed milk
- ¾ cup key lime juice
- 4 large egg yolks
- Zest of 1 lime
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar until the mixture resembles wet sand.
- Press the crust mixture firmly into the bottom of your 8×8 inch baking dish.
- Whisk together the sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
- Pour the filling over the crust and spread it evenly with a spatula.
- Bake for 15-20 minutes until the filling is just set but slightly wobbly in the center.
- Allow the bars to cool at room temperature for about an hour, then refrigerate for at least 2 hours.
- Once chilled, cut into squares and serve.
Notes
