Ingredients

Scale
  • 2 cups cooked orzo
  • 2 chicken breasts, diced
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • Fresh herbs (like parsley or basil) for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the diced chicken to the pan and cook undisturbed for about 5-7 minutes until golden brown.
  3. Stir in the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Add the cooked orzo, heavy cream, lemon juice, and lemon zest.
  6. Gently fold in the fresh spinach and stir until it wilts.
  7. Season with salt and pepper to taste.
  8. Serve warm, garnished with freshly chopped herbs.

Notes

Customize with sun-dried tomatoes or shrimp for variation. Ensure chicken is cooked properly to avoid dryness.
