Description

Delicious zucchini halves filled with creamy macaroni and cheese, offering a perfect blend of comfort and health.


Ingredients

Scale
  • 4 medium zucchini
  • 2 cups cooked macaroni
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the zucchini by cutting each in half lengthwise and scooping out the insides.
  3. Create the filling by mixing macaroni, cheddar cheese, milk, Parmesan cheese, garlic powder, salt, and pepper in a bowl.
  4. Stuff each zucchini half with the macaroni mixture.
  5. Add olive oil and sprinkle breadcrumbs on top if desired.
  6. Bake for 25-30 minutes until the zucchini is tender and topping is golden.
  7. Serve and enjoy warm!

Notes

Salting zucchini before baking helps reduce moisture. For a crispy topping, use panko breadcrumbs.
