- 8 oz pasta (spaghetti or fettuccine)
- 2 chicken breasts (boneless, skinless)
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- Salt and pepper to taste

Instructions
- Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until it’s al dente. Drain the pasta and set it aside.
- Sear the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Sear for about 6-7 minutes on each side until fully cooked. Remove and let rest.
- Sauté the Mixture: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Add Fresh Spinach: Toss in the fresh spinach, stirring until it wilts.
- Create the Cream Sauce: Pour in the heavy cream, stir in the grated Parmesan cheese and dried basil until smooth.
- Combine with Chicken and Pasta: Slice the rested chicken, return it to the skillet, add the drained pasta, and toss to coat.
- Serve immediately with extra Parmesan and fresh basil if desired.
