Description

A delightful pasta dish featuring chicken in a creamy sauce with sun-dried tomatoes and fresh spinach, perfect for romantic dinners.


Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 2 chicken breasts (boneless, skinless)
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until it’s al dente. Drain the pasta and set it aside.
  2. Sear the Chicken: In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then place them in the skillet. Sear for about 6-7 minutes on each side until fully cooked. Remove and let rest.
  3. Sauté the Mixture: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Add Fresh Spinach: Toss in the fresh spinach, stirring until it wilts.
  5. Create the Cream Sauce: Pour in the heavy cream, stir in the grated Parmesan cheese and dried basil until smooth.
  6. Combine with Chicken and Pasta: Slice the rested chicken, return it to the skillet, add the drained pasta, and toss to coat.
  7. Serve immediately with extra Parmesan and fresh basil if desired.

Notes

Make ahead by cooking chicken and sauce beforehand, then combine with pasta before serving.
