Description

Ingredients

  • 1 cup Fresh Cherry Tomatoes (halved)
  • 1 cup Cucumbers (English, diced)

  • 1/2 cup Feta Cheese (crumbled)
  • 3 tbsp Balsamic Vinegar
  • 1/4 cup Olive Oil (extra virgin)
  • Salt and Pepper (to taste)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and let it cool slightly.
  2. Combine Ingredients: In a mixing bowl, toss the cooled pasta with diced tomatoes, sliced cucumbers, olives, and feta cheese. Make sure everything is well distributed for an even mix of flavors.
  3. Create the Vinaigrette: In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper until well combined and emulsified.
  4. Add the Dressing: Drizzle the vinaigrette over the salad and gently toss all ingredients to combine. Take care not to crush the tomatoes or olives while mixing.
