- 8 oz Pasta (Rotini or Penne)
- 1 Can Black Beans (Rinsed and Drained)
- 1 Cup Corn
- 1 Bell Pepper (Diced)
- 1/2 Red Onion (Diced)
- 1 Cup Cherry Tomatoes (Halved)
- 1 Avocado (Diced)
- 1/4 Cup Cilantro (Chopped)
- 1/4 Cup Olive Oil
- 2 Tbsp Lime Juice
- 1 Tsp Chili Powder
- Salt and Pepper to Taste
Instructions
- Cook the Pasta: Fill a large pot with water and add a generous pinch of salt. Bring it to a rolling boil. Add your pasta, stirring occasionally until it reaches al dente, about 8 to 10 minutes. Drain and rinse under cold water.
- Combine Ingredients: In a large mixing bowl, combine the cooled pasta with black beans, corn, diced bell pepper, red onion, cherry tomatoes, avocado, and chopped cilantro. Gently fold together.
- Prepare the Dressing: In a separate bowl, whisk together olive oil, lime juice, chili powder, salt, and pepper until well combined.
- Chill & Serve: Pour the dressing over the pasta salad mixture and toss gently. Cover and chill in the refrigerator for at least 30 minutes.
Notes
For best flavor, prepare ahead of time and allow to chill for optimal melding of flavors. Feel free to customize with your favorite beans or proteins.
