Description

A hearty Mexican Tater Tot Casserole featuring seasoned ground meat, black beans, corn, zesty salsa, and crispy tater tots, topped with melted cheese.


Ingredients

  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag (32 oz) tater tots
  • 1 cup salsa
  • Optional toppings: sour cream, avocado slices, green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground meat in a large skillet over medium heat, breaking it apart until cooked through.
  3. Stir in the black beans and corn, then sprinkle in the taco seasoning and mix well.
  4. Grease a 9×13 inch casserole dish and spread the meat mixture evenly.
  5. Pour salsa over the meat mixture.
  6. Arrange tater tots evenly over the salsa.
  7. Bake for 25-30 minutes until the tater tots are golden brown.
  8. Sprinkle cheese on top and return to the oven for 5-10 minutes until melted.
  9. Cool slightly before serving with optional toppings.

Notes

Assemble the casserole a day in advance and store in the fridge. You can also substitute plant-based meat for a vegetarian version.
