- 2 boxes instant lemon pudding mix
- 3 cups milk
- 1 tub whipped topping (like Cool Whip)
- 1 box vanilla wafers
- Zest of 1 lemon (optional for garnish)
- Sliced lemons (for garnish, optional)
Instructions
- Combine the lemon pudding mix and milk in a large bowl, whisking until smooth.
- Allow to sit for 5 minutes to thicken.
- Fold in the whipped topping gently.
- Layer half of the vanilla wafers in a 9×13 inch dish.
- Spread half of the lemon pudding mixture over the wafers.
- Repeat the layering with the remaining wafers and pudding mixture.
- Cover and refrigerate for at least 4 hours.
- Garnish with lemon zest and sliced lemons before serving.
Notes
For best results, chill overnight to enhance flavor integration. Can be made up to two days in advance.
