Description

A refreshing dessert layered with bright lemon pudding, creamy whipped topping, and crunchy vanilla wafers, perfect for summer gatherings.


Ingredients

  • 2 boxes instant lemon pudding mix
  • 3 cups milk
  • 1 tub whipped topping (like Cool Whip)
  • 1 box vanilla wafers
  • Zest of 1 lemon (optional for garnish)
  • Sliced lemons (for garnish, optional)

Instructions

  1. Combine the lemon pudding mix and milk in a large bowl, whisking until smooth.
  2. Allow to sit for 5 minutes to thicken.
  3. Fold in the whipped topping gently.
  4. Layer half of the vanilla wafers in a 9×13 inch dish.
  5. Spread half of the lemon pudding mixture over the wafers.
  6. Repeat the layering with the remaining wafers and pudding mixture.
  7. Cover and refrigerate for at least 4 hours.
  8. Garnish with lemon zest and sliced lemons before serving.

Notes

For best results, chill overnight to enhance flavor integration. Can be made up to two days in advance.
