Description

Tender and flavorful chicken carnitas made in a slow cooker, perfect for homemade tacos with fresh toppings.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • Juice of 1 lime
  • Tortillas or toppings of choice for serving

Instructions

  1. Combine the chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper in a mixing bowl until evenly blended.
  2. Rub the spice mixture generously onto the chicken thighs, ensuring each piece is well coated.
  3. Place the seasoned chicken in the slow cooker and add the chicken broth and lime juice.
  4. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken in the slow cooker using two forks.
  6. Warm your tortillas and layer the shredded chicken into each one, allowing for customization with toppings.
