- 1 cup peanut butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar

- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- Combine the sourdough discard, peanut butter, brown sugar, granulated sugar, egg, and vanilla extract in a medium bowl.
- Integrate the baking soda and salt into the wet ingredients.
- Form the cookies by dropping spoonfuls of dough onto a prepared baking sheet, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are golden.
- Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For a twist, add chocolate chips or nuts. Freeze the cookie dough for up to three months and bake straight from frozen.
