Description

This comforting Southern dish features crispy bacon and tender green beans cooked to perfection in savory chicken broth.

Ingredients

Scale
  • 1 pound fresh green beans (trimmed)
  • 4 slices bacon (chopped)
  • 3 cloves garlic (minced)
  • 1 onion (chopped)
  • 3 cups chicken broth
  • Salt and pepper (to taste)
  • Optional: red pepper flakes (for heat)

Instructions

  1. Crisp the bacon: Heat a large skillet over medium heat and add the chopped bacon. Sizzle it away for 5-7 minutes until crispy, stirring occasionally.
  2. Reserve the drippings: Use a slotted spoon to remove the bacon, setting it aside on a paper towel-lined plate. Leave those precious bacon drippings in the pan.
  3. Sauté the onions: Toss in the chopped onions, cooking for 3-5 minutes until translucent, stirring frequently to avoid burning.
  4. Add garlic: Stir in the minced garlic and sauté it for another minute.
  5. Incorporate the green beans: Gently add the trimmed green beans, ensuring they are well-coated with the bacon drippings.
  6. Pour in the broth: Gradually add the chicken broth, seasoning it with salt, pepper, and a dash of optional red pepper flakes.
  7. Simmer to perfection: Bring the mixture to a boil, then reduce to low heat. Let it simmer for 30-40 minutes.
  8. Combine and serve: Stir in the reserved bacon before serving warm.

Notes

Make-ahead tips: Prepare a day in advance and store in the fridge. Reheat gently on the stove.
