A vibrant medley of flavors featuring tender chicken, quinoa, and fresh vegetables, perfect for any meal.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup cooked quinoa
  • 1 bell pepper, diced
  • 1 cup corn (fresh or canned)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup salsa
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Cook the chicken: Heat your non-stick skillet over medium heat and season chicken breasts with salt and pepper. Cook for about 6-7 minutes on each side until golden brown. Let rest before slicing.
  2. Prep the veggies: In a mixing bowl, combine cooked quinoa, diced bell pepper, corn, black beans, and halved cherry tomatoes. Toss gently.
  3. Combine: Slice the rested chicken and fold it into the veggie medley.
  4. Add flavors: Drizzle fresh lime juice and stir in salsa.
  5. Serve: Divide among bowls and top with avocado and cilantro.
  6. Enjoy: Savor the burst of flavors!

Notes

Make-ahead tips: Prep chicken and quinoa in advance and store separately. Can be warmed slowly on the stove or oven when ready to serve.
