Description

A vibrant and nutritious salad featuring grilled chicken, fresh vegetables, and a creamy ranch dressing with a zesty kick of lime.

Ingredients

Scale
  • 2 cups cooked and chopped chicken breast
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or canned)
  • 1/2 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cilantro, chopped
  • 1/2 cup ranch dressing
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the romaine lettuce, chicken, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a separate small bowl, whisk together the ranch dressing, lime juice, salt, and pepper until smooth.
  3. Pour the dressing over the salad ingredients and toss gently to combine, ensuring everything is coated well.
  4. Sprinkle shredded cheddar cheese on top before serving for an added layer of creaminess and flavor.

Notes

For best freshness, store dressing separately until ready to serve. Customize with additional vegetables if desired.
