Description

A vibrant and refreshing slaw that combines sweet corn, crisp cabbage, and a spicy kick from jalapeños, perfect for summer cookouts and as a topping for tacos.

  • 3 green onions (chopped)
  • 0.5 cup mayonnaise (or Greek yogurt)
  • 2 limes (juice of)
  • 2 tablespoons sugar
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)

Instructions

  1. Begin by placing the cole slaw mix, corn, minced jalapeño, roughly chopped cilantro, and green onions into a large bowl. Toss them together gently to ensure even distribution.
  2. In a separate bowl, whisk together the mayonnaise, fresh lime juice, sugar, garlic powder, salt, and pepper until you achieve a smooth and creamy consistency.
  3. Pour the dressing over the slaw mixture. Gently fold the ingredients until everything is beautifully coated.
