- 1 lime (juiced)

Instructions
- Preheat your oven to 425°F (220°C).
- Cut the watermelon into fry-shaped wedges.
- Combine olive oil, chili powder, and salt in a mixing bowl.
- Toss the watermelon fries in the spice mixture.
- Arrange the fries on a rimmed baking sheet lined with parchment paper.
- Bake for about 15-20 minutes, flipping halfway through.
- Prepare the dipping sauce by mixing coconut milk, lime juice, and maple syrup until smooth.
- Serve the watermelon fries hot with the dipping sauce on the side and garnish with fresh mint.
