Description

Crispy watermelon fries with a spicy kick, served with a creamy coconut lime dipping sauce.


Ingredients

  • 1 medium watermelon
  • 2 tablespoons chili powder
  • 1 tablespoon olive oil
  • Salt to taste
  • 1/2 cup coconut milk
  • 1 lime (juiced)
  • 1 tablespoon maple syrup
  • Fresh mint for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the watermelon into fry-shaped wedges.
  3. Combine olive oil, chili powder, and salt in a mixing bowl.
  4. Toss the watermelon fries in the spice mixture.
  5. Arrange the fries on a rimmed baking sheet lined with parchment paper.
  6. Bake for about 15-20 minutes, flipping halfway through.
  7. Prepare the dipping sauce by mixing coconut milk, lime juice, and maple syrup until smooth.
  8. Serve the watermelon fries hot with the dipping sauce on the side and garnish with fresh mint.

Notes

Make-ahead: Prepare the dipping sauce a few hours in advance for best flavor. Cooking alternatives: An air fryer works great for these fries as well.
