Description

Delicious strawberry cheesecake squares with a buttery graham cracker crust and creamy filling, perfect for summer gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, pureed
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Combine the graham cracker crumbs and melted butter in a mixing bowl and mix until resembling wet sand. Press firmly into the bottom of the prepared baking dish.
  3. Beat the softened cream cheese and sugar together with an electric mixer until smooth and creamy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust and gently swirl in the strawberry puree and strawberry jam.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheesecake has set with a slight jiggle in the center.
  6. Cool to room temperature, then refrigerate for at least two hours before slicing into squares.

Notes

Make these squares the day before for even better flavor. They can be customized with different fruits and are easy to prepare.
