Description

Delicious strawberry crumble bars with a buttery oat topping that encapsulates the essence of spring.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup butter, softened
  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the oats, flour, brown sugar, and softened butter in a large mixing bowl until the mixture resembles coarse crumbs.
  3. Press half of the mixture into the bottom of a greased 9×9-inch baking pan.
  4. Prepare the filling by tossing the sliced strawberries with sugar, cornstarch, and vanilla extract, then spread it over the crust.
  5. Sprinkle the remaining oat mixture over the strawberries to create a topping.
  6. Bake for 25-30 minutes until the top is golden brown and the strawberries bubble.
  7. Cool in the pan before cutting into squares.

Notes

For added flavor, consider adding crushed nuts or a touch of cinnamon to the topping. Allowing bars to cool completely helps them set better.
