- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 cups fresh strawberries, hulled and sliced
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup cornstarch
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by combining flour and powdered sugar, then cut in softened butter until crumbly. Press mixture into the bottom of a greased 9×9 baking dish.
- Bake the crust for 15-20 minutes until edges are light golden brown.
- Make the custard by whisking together eggs and granulated sugar until slightly frothy. Add milk, vanilla extract, and cornstarch; whisk until smooth.
- Fold in the sliced strawberries.
- Pour the custard mixture over the baked crust, spreading evenly.
- Bake again for 25-30 minutes until the custard is set.
- Cool completely in the pan, cut into squares, and serve with whipped cream if desired.
Notes
These bars can be made ahead and stored in the fridge. For a gluten-free version, substitute all-purpose flour with gluten-free flour.
