Description

Enjoy the vibrant flavors of sushi in a delightful cup form, blending fresh vegetables, sushi rice, and a creamy sauce.


Ingredients

  • 1 cup Sushi Rice, rinsed
  • 1.25 cups Water
  • 2 cups Finely Chopped Veggies (carrots, cucumbers, bell peppers)
  • 1 cup Steamed Mukimame
  • 1 medium Diced Avocado
  • 3 tablespoons Sauce of Choice (Soy sauce, Tamari, Coconut Aminos)
  • 0.25 cup Mayonnaise
  • 1 tablespoon Sriracha Sauce
  • 1 teaspoon Honey
  • 0.5 teaspoon Sesame Oil
  • 1 tablespoon Black Sesame Seeds (for garnish)

Instructions

  1. Prepare the Sushi Rice: Rinse sushi rice under cold water until clear. Combine with 1.25 cups of water and cook. Allow to cool completely.
  2. Chop Your Veggies: Finely chop vegetables into bite-sized pieces.
  3. Mix the Sauce: Combine soy sauce, mayonnaise, sriracha, honey, and sesame oil in a bowl.
  4. Layer the Cups: Use cupcake liners to layer sushi rice, veggies, mukimame, avocado, and sauce.
  5. Finish & Serve: Sprinkle black sesame seeds on top and serve immediately or chill slightly.
