Ingredients

  • 2 medium Potatoes (Yukon Gold or equivalent)
  • 2 cups Kale, chopped
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Chicken Broth (or vegetable broth for a vegetarian option)
  • 1 cup Heavy Cream (or alternative)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Brown the sausage: In a large pot over medium heat, add the Italian sausage. As it cooks, break it up with your wooden spoon until it’s browned and fragrant, approximately 5–7 minutes.
  2. Sauté the aromatics: Toss in the chopped onion and minced garlic. Cook for about 3-4 minutes, stirring occasionally, until the onion becomes translucent and the garlic releases its delightful aroma.
  3. Add potatoes & broth: Stir in the diced potatoes, ensuring they are well-coated with the flavors. Pour in the chicken broth.
  4. Simmer: Bring the mixture to a rolling boil. Then, reduce the heat to low and simmer for about 15-20 minutes, letting the potatoes become tender.
  5. Fold in the kale: Add the chopped kale, stirring until just wilted—this should only take a couple of minutes.
  6. Creamy finish: Gently pour in the heavy cream, swirling it into the pot.
  7. Seasoning: Taste and season with salt and pepper as needed.
  8. Final simmer: Allow the soup to simmer for an additional 5-10 minutes before serving hot.

Notes
